Sorrel - - Rumex acetosa
Perennial Heirloom. Sorrel shows up early and stays late in your garden, offering lemony leaves at the beginning of spring through the end of fall. Perennial in USDA zones 4-9. For the best flavor, pick the leaves when young, succulent, and tender. Sorrel adds citrusy brightness to salads and as an accent to rich fish or dairy dishes. It is a traditional source of cool-season Vitamin C.

Planting & Care
Soil & Water: Grow in rich soil high in organic matter and nitrogen. They perform best with consistent moisture; drier conditions will increase the intensity of flavors.
Planting & Growing: To start indoors, plant seeds 1/4" deep in flats. Direct seed outdoors after the last frost, with seeds 2"-3" apart, 1/4" deep. Thin to 12"-18" apart. Easy to grow in containers. Lift and divide this perennial in summer.
Harvesting & Storage: Pick baby leaves before they reach their mature length of 8" and use them within a day or two.
