Primarily cultivated for its grains, Amaranth, Mayo Indian is used to make pinole and atole, and its nutritious leaves can be harvested similarly to spinach. Featuring striking black seeds and vibrant maroon-red stalks, leaf veins, and large seed heads, this plant also serves as an attractive ornamental addition to any garden.
