Released by Louisiana State University in 2010, White Bonita (sometimes just called Bonita) combines a beautiful, light tan/rose skin with creamy-white, firm flesh that stays white when cooked. It offers a mild, slightly nutty, less-sweet flavor than orange types — think Yukon Gold potato meets sweet potato — making it perfect for savory dishes, fries, chips, roasting, soups, gnocchi, tempura, or anywhere you want a sweet potato that doesn’t overpower with sugar. Excellent baked or mashed with just butter and salt. High dry-matter content gives it a fluffy, potato-like texture while still delivering all the vitamins and fiber of a true sweet potato.

Simple Growing Instructions:
- Plant after all danger of frost when soil temps reach 65°F+ (mid-to-late spring)
- Full sun and loose, well-drained soil (pH 5.8–6.5); raised beds work great
- Space slips 10–18 inches apart (12 inches is ideal for big yields)
- Rows 3–4 feet apart if planting multiple rows
- Bury roots and stem nodes 3–4 inches deep, leaves above soil
- Water regularly until established, then moderately — fairly drought-tolerant once growing
- No hilling required
- Harvest in 100–115 days when vines yellow (can hold in ground extra 1–2 weeks if needed)
- Cure 7–10 days at 80–85°F and high humidity, then store at 55–60°F
