Quick Facts:

  • Skin Color: Bright red to deep rose, smooth with shallow eyes
  • Ease of Growing: Easy to Intermediate
  • Flesh Color: Solid red to pinkish-red throughout (retains most color when boiled, steamed, or microwaved; fades slightly when roasted or fried)
  • Maturity: Mid-season (90–110 days)
  • Yield: High, 1 lb planted will typically result in 8–15 lb harvested, sets many medium-sized oblong to round tubers
  • Planting Rate: Usually 5–7 seed pieces per lb, space 8" to 12" apart in row (closer spacing gives more cocktail-size reds)
  • Cooking Type: Waxy to slightly floury; excellent boiled, steamed, or roasted; makes stunning red mashed potatoes and potato salad
  • Disease Resistances: Good resistance to scab and hollow heart, moderate resistance to late blight, golden nematode (Ro1), and PVY; susceptible to early blight in humid seasons

Culinary Use:

Adirondack Red has a smooth, creamy texture with a mild, slightly sweet, and buttery flavor. Its vivid red flesh is loaded with anthocyanins (the same antioxidants found in berries), making it both beautiful and nutritious. Perfect for colorful mashed potatoes, roasted wedges, home fries, potato salads, or even naturally pink/red gnocchi and pancakes.

History:

  • Origin: Developed by Cornell University (Robert Plaisted and Walter De Jong) in Ithaca, New York
  • Breeding: Released in 2004 from a cross involving the red-fleshed South American line ND2223-8R and the variety Red Norland
  • Introduction: Named after New York’s Adirondack Mountains, it quickly became popular for its intense internal color, good yield, and adaptability to Northeast and Midwest growing conditions
