White Spanish is a time-tested heirloom onion straight from Mediterranean Spain—where onions have flavored dishes for millennia and were prized by ancient Egyptians as symbols of eternity. This long-day variety thrives in northern gardens, producing jumbo (up to 5"), crisp white bulbs with mild, sweet flavor that’s perfect raw in salads, grilled, or stored through winter. Growing Tips Direct-transplant as soon as soil can be worked in early spring (soil ≥40°F). Space 4–6″ apart in rows 12–18″ apart. Provide full sun, consistent moisture (1″ weekly), and occasional nitrogen boosts. Mulch to retain moisture and suppress weeds. Harvest when 50–70% of tops yellow and fall over; cure in a dry, airy spot for 2–3 weeks.
