Growing tips

🌱Start indoors 8 to 10 weeks before last frost. Eggplant loves heat — don’t transplant until nights are consistently above 55°F and soil is warm. Cold soil stunts growth significantly.

☀️Plant in the sunniest spot in your garden. Eggplant needs 6 to 8 hours of direct sun daily to set fruit well. Stake plants as they grow to support heavy fruit loads.

💧Water deeply and consistently — about 1 to 2" per week. Mulch heavily to retain soil moisture and warmth. Inconsistent watering leads to bitter, tough fruit.

🍽️Harvest when skin is glossy and fruit gives slightly to pressure. Dull skin means it’s overripe. Grill with olive oil, layer into parmesan, roast for baba ganoush, or cube into ratatouille.
