Growing tips

🌱Start indoors 8–10 weeks before last frost. Eggplant loves heat — use a heat mat for germination (80–85°F) and don’t rush transplanting outdoors until nights are consistently above 55°F.

☀️Plant in full sun in rich, well-drained soil. Space 18–24" apart. Eggplant thrives in heat — black plastic mulch warms the soil and dramatically boosts growth and fruit production.

💧Water deeply and consistently. Eggplant is sensitive to drought stress during fruit set — inconsistent moisture leads to bitter fruit and blossom drop. Drip irrigation works best.

🍆Harvest when skin is glossy and deep purple — dull skin means the fruit is overripe and seeds will be tough. The long, slender shape makes it perfect for grilling whole, slicing into rounds for parmesan, or cutting into strips for stir-fries.
