Growing tips

🌱Direct sow or transplant in early spring or late summer for a fall crop. Pak choi thrives in cool weather — heat causes bolting. Succession sow every 2–3 weeks for a continuous harvest through spring and fall.

💧Keep soil consistently moist with plenty of organic matter. Uneven watering leads to bitterness and bolting. Mulch around plants to retain moisture and keep roots cool during warmer spells.

✂️Harvest individual outer leaves as needed for a cut-and-come-again crop, or cut the whole head at the base when compact and firm. Best used fresh — the crisp stalks and tender leaves are at their peak right after harvest.

🍲Stir-fry with garlic and oyster sauce, add to ramen or miso soup, or slice raw into salads. The thick white stems hold up beautifully to high heat while the leaves wilt quickly — add stems first, leaves last.
