Growing tips

🌱Start indoors 2–3 weeks before last frost or direct sow after frost when soil reaches 70°F. Set out 3–4 transplants per hill and thin to the strongest 2 when vines reach 1–2' long.

🧱Can be trellised to save space — use fabric slings to support developing fruits on the trellis. In open gardens, let vines sprawl on mulched ground to retain moisture and suppress weeds.

💧Water well until vines are established, then water more sparingly as fruits develop — reducing water near harvest concentrates sweetness. Mulch heavily to retain moisture and prevent weed competition.

🍉Harvest when the tendril closest to the stem turns dry and brown and the stem becomes brittle — the surest sign of ripeness. The nearly black rind and hollow thump confirm it’s ready. Eat fresh, freeze in honey syrup, or pickle the rind for a Southern classic.
